mexican breakfast for dinner

last night mike was studying for a neurology exam so i decided to make him a meal that would lift his spirits. we had an avocado that we needed to use up so i decided to do a mexican spin on a breakfast sandwich.

i scrambled 4 eggs with some milk, salt, pepper and added cheddar cheese and pieces of red pepper. i then mixed 1 avocado with a quarter cup of sour cream along with a squirt of lemon juice, salt, pepper, a dash of cumin, and some shiracha hot sauce. I toasted four pieces of artisan whole wheat bread and spread a little butter on them. I then topped a slice with the egg mixture, added a layer of the avocado cream and then put a little salsa on top. i completed my sandwich by topping it with another slice of bread. I served my breakfast creation with some home fries that I baked in olive oil and seasoned with rosemary, garlic, red onion, cilantro, salt and pepper.

4 pieces of artisan whole wheat bread
4 large eggs
milk
salt
pepper
1/8 of a red pepper
1/2 c. cheddar cheese
1 avocado
1/4 cup sour cream
cumin
lemon juice
butter
2 potatoes
red onion
cilantro
olive oil
shiracha hot sauce

unfortunately it didn't last long enough for a photo.

  1. What an interesting breakfast idea! Shame you didn't manage to get a photo, would have been good to see. Will definitely have to give this one a go...
